Bikini

Yields 10 people

For the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Place all the ingredients inside a pot, heat until it reaches a simmer, agitating until the sugar dissolves. Next, turn off the heat and leave to cool completely. Decant into a sealable bottle, cap it and refrigerate it chilled, where it will keep for up to one month.

For the Cocktail Base: Pour all the liquids into a large bottle, let it rest for one hour, then filter it best through muslin, to ensure it's fully clarified.

For serving: Measure 85ml of your premix into a mixing glass containing ice, and stir carefully for one minute to chill. Filter to a frosted cocktail glass or a similar vessel, garnish with some cranberries and finish by giving it a light spray of mandarin oil over the top.
